Can I track the entire contents of someone's phone to monitor it?

Can I track the entire contents of someone's phone to monitor it? I bought my boyfriend's phone. I want to quickly transfer all the contents of the phone to my home pc or a secure server and continue to monitor it. Can I do this without jailbreaking the phone?
