Can my high school monitor everything I do on my iPad?

Can my high school monitor everything I do on my iPad, even when I'm not connected to their wifi? Hi, my school gave everyone an iPad to replace our textbooks. They said they can monitor what we are doing on it even when we are not connected to their WiFi and we are at home. Is that true?
